What is horseradish?
Horseradish is the root of the horseradish plant. Which is a member of the brassica family. (Brussels sprouts, radishes, broccoli, kale) If you think about it all of those can have a little spicy, peppery bite.
Horseradish is readily grown in temperate climates. It’s hardy in zones 3-9, which is much of the US and Canada. It can become invasive though, so it is best to contain it.

It spreads by the roots so plant it contained in pots. (We actually buried an old kiddie pool that had holes drilled in it for drainage, so that we could have a small patch.)

To make it with prepared ingredients
- dill weed
- dry mustard
- worcestershire sauce
- hot sauce
- salt and pepper
To make it from scratch
- lemon juice
- salt and pepper
- optional; dill, mustard, hot sauce
How to make horseradish sauce without sour cream
With prepared ingredients
- Measure all ingredients. Add to small bowl.
- Mix well
- Let chill at least one hour.
- Place eggs in food processor. Stream in oil slowly until a slightly thickened emulsion forms.
- Add remaining ingredients, pulse until mixed.
- Chill at least one hour.
Pro tip; Remove as much of the liquid from the prepared horseradish as you can. Either strain it in a fine mesh sieve or press your finger against the spoon to drain.
